Another unbelievable meal at Ellen’s Southern Kitchen! It took every hunger pain in my stomach not to order the Pork Tinga Tacos (they are amazing!) because my life goal IS to try every great meal in the world. Thank goodness I did! I found yet another delicious breakfast dish: Poached Eggs & Grits (see below).

The cheesy grits (best grits I’ve had in Texas) had crumbled  hickory bacon, fresh spinach and tomatoes, topped with two perfectly poached eggs with hollandaise sauce. Wow! The extravaganza that occurred in my mouth can’t be described by words.

The cheesy grits were cheesy, but not too cheesy and the bacon had a bold hickory taste which added the perfect amount of salty flavor to the dish. The eggs were runny, just as they should be and since I had to take half of it home (very generous portions) it was just as good as leftovers.  I can’t wait to go back and try something else delicious!
