My love of cornbread has now been exercised to the fullest. Kit’s Kornbread Sandwich & Pie Bar took my lunch to a whole other level by offering a BLT sandwich on their jalapeño cornbread. Picture this: bacon, lettuce, tomato, mayo, cheddar cheese on fresh baked cornbread infused with jalapeno’s, accompanied by a fresh broccoli Salad (broccoli, carrots, red cabbage, golden raisins, sunflower seeds, tossed in homemade dressing). If the picture you created in your head looks anything like the picture below, way to go!
I was a little skeptical at first, but I couldn’t pass up the opportunity to try a potentially amazing combination. I’m not your typical “risk-taker” in life, but when it comes to eating, risk is my middle name. Sometimes it pays off and sometimes it doesn’t. And when it does your mind gets blown. Anyway, back to the sandwich…
This BLT was definitely worth the risk. The cheddar complimented the jalapenos in the cornbread perfectly and the bacon added a totally different texture and saltiness that I’ve never experienced with any other BLT. Usually BLT’s are served on toasted bread, this cornbread was sliced thin, and served warm – right out of the oven, which made eating this sandwich a whole different experience.
I would highly recommend stopping by Kit’s Kornbread Sandwich & Pie Bar. (I didn’t get a chance to try the pie, but it looked incredible!)
